4 bone-in, skin-on chicken thighs

2 tablespoons jerk seasoning (store-bought or homemade)

2 cloves garlic, minced

1-inch piece of ginger, grated

1 tablespoon brown sugar

2 tablespoons soy sauce

1 tablespoon olive oil

2 limes, juice and zest

1 tablespoon fresh thyme leaves

Salt and pepper to taste

1 mango, diced (for salsa)

1 red bell pepper, diced (for salsa)

1 small red onion, finely chopped (for salsa)

1 jalapeño, minced (optional for heat)

Fresh cilantro, chopped (for salsa)

Additional lime wedges (for serving)

Instructions
 

In a large bowl, combine jerk seasoning, minced garlic, grated ginger, brown sugar, soy sauce, olive oil, lime juice, lime zest, fresh thyme, salt, and pepper. Mix well to create a marinade.

    Add the chicken thighs to the marinade, ensuring they're covered thoroughly. Cover the bowl and refrigerate for at least 2 hours, preferably overnight for maximum flavor.

      Preheat your grill to medium-high heat. Remove the chicken from the marinade, allowing any excess to drip off.

        Place the chicken skin-side down on the grill. Grill for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (74°C) and the skin is crispy.

          While the chicken is grilling, prepare the mango salsa by combining diced mango, red bell pepper, red onion, jalapeño (if using), and chopped cilantro in a bowl. Drizzle with lime juice and season with salt. Mix well.

            Once the chicken is cooked, remove it from the grill and let it rest for about 5 minutes. This helps retain its juices.

              Serve the jerk chicken on a platter, topped with the mango salsa, and garnish with lime wedges.
