Italian Grilled Cheese Sandwiches

4 slices of sourdough bread

2 tablespoons pesto sauce

4 slices of fresh mozzarella cheese

4 slices of provolone cheese

1 medium tomato, sliced

1/2 cup fresh basil leaves

1 tablespoon olive oil

Salt and pepper to taste

Instructions
 

Preheat a skillet over medium heat.

    Take two slices of sourdough bread and spread 1 tablespoon of pesto sauce on one side of each slice.

      On the unpasted side of both slices, layer 2 slices of fresh mozzarella cheese.

        Add 2 slices of provolone cheese on top of the mozzarella, followed by a layer of tomato slices and a handful of fresh basil leaves.

          Season with a pinch of salt and a dash of pepper.

            Top with the remaining slices of sourdough bread, pesto side down.

              Drizzle olive oil on the skillet to coat it evenly.

                Place the sandwiches in the skillet and grill for about 3-4 minutes on one side until golden brown.

                  Carefully flip the sandwiches and grill for another 3-4 minutes or until the cheese is melted and both sides are crispy and golden.

                    Remove from the skillet and let them cool for a minute. Cut each sandwich in half and serve warm.
