4 boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon crushed red pepper flakes (optional for heat)

Salt and freshly ground black pepper to taste

1 cup cherry tomatoes, halved

1 medium zucchini, sliced

1 medium bell pepper, sliced (any color)

1 cup shredded mozzarella cheese

Fresh basil leaves for garnish

Preheat your oven to 400°F (200°C).

    In a large mixing bowl, combine the olive oil, garlic powder, oregano, basil, crushed red pepper flakes, salt, and pepper.

      Add the chicken breasts to the bowl and coat them evenly with the herb mixture. Let it marinate for about 15-20 minutes for better flavor.

        While the chicken is marinating, prepare a baking dish by spraying it lightly with non-stick cooking spray or brushing it with a little olive oil.

          Place the marinated chicken breasts in the center of the baking dish.

            Scatter the cherry tomatoes, zucchini, and bell pepper around the chicken, ensuring they get coated with any remaining herb mixture.

              Bake the chicken and vegetables in the preheated oven for 25 minutes.

                Remove the baking dish from the oven and sprinkle the shredded mozzarella cheese evenly over the chicken and vegetables.

                  Return to the oven and bake for an additional 10-15 minutes, or until the chicken is cooked through (internal temperature of 165°F / 75°C) and the cheese is bubbly and golden.

                    Once baked, let the dish rest for 5 minutes before serving. Garnish with fresh basil leaves.
