4 pounds beef short ribs

2 tablespoons olive oil

1 large onion, diced

3 garlic cloves, minced

2 carrots, diced

2 celery stalks, diced

2 cups beef broth

1 cup Irish whiskey (non-alcoholic substitute: Irish stout or root beer for a unique flavor)

2 tablespoons tomato paste

1 tablespoon Worcestershire sauce

2 teaspoons dried thyme

2 bay leaves

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 350°F (175°C).

    Season the short ribs generously with salt and pepper.

      In a large, oven-safe pot or Dutch oven, heat the olive oil over medium-high heat.

        Once the oil is hot, add the short ribs, searing them on all sides until nicely browned (about 3-4 minutes per side). Remove the ribs from the pot and set aside.

          In the same pot, add the diced onion, carrots, and celery. Sauté for about 5-7 minutes, or until the vegetables are softened.

            Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

              Add the tomato paste to the pot and stir well, allowing it to cook for about 2 minutes.

                Pour in the beef broth and Irish whiskey (or substitute), scraping up any browned bits from the bottom of the pot.

                  Stir in the Worcestershire sauce, thyme, and bay leaves.

                    Return the short ribs to the pot, ensuring they are submerged in the liquid.

                      Cover the pot with a lid and transfer it to the preheated oven. Braise for about 3 hours, or until the ribs are tender and falling off the bone.

                        Once cooked, remove the pot from the oven and let the meat rest for about 10 minutes before serving.

                          Carefully remove the bay leaves and season the braising liquid with additional salt and pepper if needed.
