2 lbs potatoes, peeled and cubed

1 cup sharp cheddar cheese, grated

1/2 cup cream cheese, softened

1/2 cup sour cream

1/4 cup green onions, chopped

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 store-bought pie crust (or homemade if preferred)

1 egg, beaten (for egg wash)

Fresh chives for garnish

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Cook Potatoes: Place the cubed potatoes in a large pot of salted water. Bring to a boil and cook until tender, about 15-20 minutes. Drain and let cool slightly.

      Mash Potatoes: In a large mixing bowl, combine the cooked potatoes, cream cheese, sour cream, garlic powder, onion powder, salt, and pepper. Mash together until smooth and creamy.

        Add Cheese and Onions: Stir in the grated cheddar cheese and chopped green onions until well combined. Taste and adjust seasoning if necessary.

          Prepare Pie Crust: Roll out the pie crust and fit it into a 9-inch pie pan. Trim any excess dough.

            Fill Pie Crust: Spoon the potato mixture into the prepared pie crust, smoothing out the top.

              Egg Wash: Brush the edges of the pie crust with the beaten egg for a golden finish.

                Bake the Pie: Place the pie in the preheated oven and bake for 30-35 minutes, or until the crust is golden brown and the filling is heated through.

                  Cool and Garnish: Let the pie cool for 10 minutes after baking. Garnish with fresh chives before slicing and serving.
