Ingredients
  

4 large potatoes, peeled and cubed

1 cup kale or cabbage, finely chopped

1 cup green onions, chopped

1/2 cup buttermilk or milk

1/4 cup unsalted butter

Salt and pepper to taste

Fresh chives for garnish

A pinch of nutmeg (optional)

Instructions
 

In a large pot, bring salted water to a boil and add the cubed potatoes. Cook until tender, about 15-20 minutes.

    While the potatoes are cooking, in a separate pan, heat a tablespoon of butter over medium heat. Add the chopped kale or cabbage and sauté for about 5-7 minutes until tender and slightly wilted.

      Once the potatoes are cooked, drain them and return them to the pot.

        Add the buttermilk (or milk), remaining butter, sautéed greens, and chopped green onions to the pot with the potatoes.

          Mash everything together using a potato masher until creamy and fluffy. Adjust the consistency with more buttermilk if desired.

            Season with salt, pepper, and a pinch of nutmeg if using. Combine well.

              Serve hot, garnished with fresh chives on top.
