4 boneless, skinless chicken breasts

Salt and black pepper, to taste

2 tablespoons olive oil

1 large onion, finely chopped

2 cloves garlic, minced

1 cup chicken broth

1/2 cup Irish cream (non-alcoholic version or substitute heavy cream)

1 tablespoon whole grain mustard

1 teaspoon dried thyme

1 teaspoon paprika

1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

Season the chicken breasts generously with salt and black pepper on both sides.

    In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and sear them for about 5-7 minutes on each side or until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.

      In the same skillet, reduce the heat to medium and add the chopped onion. Sauté for about 3-4 minutes until the onion becomes translucent.

        Add the minced garlic to the skillet and cook for another minute, stirring to prevent burning.

          Pour in the chicken broth, scraping up any browned bits from the bottom of the pan to incorporate the flavors. Bring to a gentle simmer.

            Stir in the Irish cream, whole grain mustard, thyme, and paprika. Mix well and let the sauce simmer for about 5-6 minutes, allowing it to thicken slightly.

              Return the seared chicken to the skillet, coating it with the creamy sauce. Let it simmer for an additional 3-4 minutes to heat through and combine the flavors.

                Once the sauce has reached your desired consistency, remove the skillet from heat.

                  Garnish with freshly chopped parsley before serving.
