8 ounces Irish bacon (or unsmoked back bacon), diced

1 medium onion, chopped

2 cloves garlic, minced

4 large potatoes, peeled and diced

4 cups chicken or vegetable broth

2 cups green cabbage, thinly sliced

1 cup carrots, diced

1 teaspoon dried thyme

1 bay leaf

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

In a large pot, heat the olive oil over medium heat. Add the diced Irish bacon and cook until it turns crispy and golden, about 5-7 minutes. Remove the bacon with a slotted spoon and set aside, leaving the rendered fat in the pot.

    Add the chopped onion to the pot and sauté until softened and translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

      Incorporate the diced potatoes and carrots, stirring to coat them in the bacon fat. Sauté for another 3-4 minutes.

        Pour in the chicken or vegetable broth, and add the sliced cabbage, dried thyme, bay leaf, and the reserved crispy bacon. Bring the mixture to a boil.

          Once boiling, reduce the heat to low and cover the pot. Let it simmer for about 25-30 minutes or until the potatoes and carrots are tender.

            Remove the bay leaf and season the soup with salt and pepper to taste. If you prefer a creamier texture, you can mash a few of the potatoes with a fork or potato masher in the pot.

              Serve hot, garnished with freshly chopped parsley for added flavor and color.
