6 slices of Irish bacon or thick-cut bacon, chopped

1 medium onion, diced

2 cloves garlic, minced

4 medium potatoes, peeled and diced

4 cups vegetable broth

2 cups green cabbage, shredded

1 cup carrots, diced

1 teaspoon thyme (fresh or dried)

1 bay leaf

Salt and pepper to taste

2 tablespoons olive oil

Fresh chives, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped bacon and sauté until crispy, about 5-7 minutes. Remove the bacon pieces and set them aside, leaving the rendered fat in the pot.

    In the same pot, add the diced onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic and sauté for another minute until fragrant.

      Add the diced potatoes and carrots to the pot, stirring to combine. Cook for about 5 minutes, allowing the vegetables to soften slightly.

        Pour in the vegetable broth, then add the thyme and bay leaf. Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes, or until the potatoes are fork-tender.

          Add the shredded cabbage and cooked bacon back into the pot. Stir everything together and let it simmer for an additional 5 minutes, until the cabbage wilts down.

            Remove the bay leaf and season the soup with salt and pepper to taste.

              Serve hot, garnished with fresh chopped chives on top for added color and flavor.
