Instant Pot Tuscan Chicken Pasta

2 boneless, skinless chicken breasts, cut into bite-sized pieces

1 tablespoon olive oil

3 cloves garlic, minced

1 teaspoon Italian seasoning

1 teaspoon smoked paprika

Salt and pepper, to taste

3 cups chicken broth

12 ounces pasta (penne or rotini work well)

1 cup heavy cream

1 cup cherry tomatoes, halved

2 cups fresh spinach

1/2 cup grated Parmesan cheese

Fresh basil, for garnish (optional)

Instructions
 

Set the Instant Pot to 'Sauté' mode and add olive oil. Once hot, add chicken pieces, seasoning with Italian seasoning, smoked paprika, salt, and pepper. Sauté for 5-7 minutes, until chicken is browned.

    Add minced garlic and sauté for an additional 1-2 minutes until fragrant.

      Pour in chicken broth and stir well, scraping the bottom of the pot to prevent any sticking.

        Add the pasta to the broth and gently press it down so it's submerged but do not stir. Close the lid and ensure the valve is set to 'sealing.'

          Cook on high pressure for 5 minutes. When done, perform a quick release of the pressure.

            Once the steam is fully released, open the lid and stir in the heavy cream, cherry tomatoes, spinach, and Parmesan cheese until the spinach wilts and the cheese is melted and creamy.

              Taste and adjust seasoning if needed, adding more salt or pepper as preferred.

                Serve warm, garnished with fresh basil if desired.
