1 cup heavy cream

1/2 cup panko breadcrumbs

2 tablespoons unsalted butter, melted

Fresh parsley, chopped (for garnish)

Prepare the Pasta: In the Instant Pot, combine the elbow macaroni and vegetable broth. Secure the lid and set the valve to sealing. Cook on high pressure for 4 minutes.

    Release Pressure: Once the cooking time is up, perform a quick release of the pressure. Carefully remove the lid and give the pasta a good stir.

      Add Cream and Cheeses: Stir in the minced garlic, heavy cream, sharp cheddar, Gruyère cheese, garlic powder, onion powder, and Dijon mustard. Mix until the cheeses are melted and the sauce is creamy.

        Season: Drizzle in the truffle oil and season with salt and pepper to taste. Stir to combine thoroughly and allow the mixture to heat through for 2-3 minutes on the sauté function, stirring occasionally.

          Prepare Topping: In a small bowl, mix the panko breadcrumbs with melted butter. This will be used for the crispy topping.

            Crisp the Topping: Switch the Instant Pot to the sauté function. Sprinkle the panko mixture evenly over the mac & cheese. Let it cook for about 3-4 minutes or until the breadcrumbs turn golden brown and crispy.

              Serve: Turn off the Instant Pot, and carefully spoon the mac & cheese into serving bowls. Garnish with chopped parsley for a fresh touch.
