Ingredients

1 pound large shrimp, peeled and deveined

1 cup cornstarch

1/2 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon garlic powder

1/3 cup water

1/2 cup walnuts

1/4 cup honey

2 tablespoons mayonnaise

1 tablespoon condensed milk

Vegetable oil (for frying)

Green onions, chopped (for garnish)

Instructions

Prepare the Walnuts: In a small saucepan, bring 1 cup of water to a boil. Add in the walnuts and boil for about 2 minutes. Drain the walnuts and rinse them under cold water. In the same saucepan, heat 1 tablespoon of sugar with 1/4 cup of water until dissolved; add the walnuts and cook over medium heat until the water evaporates and the walnuts are caramelized. Transfer to a parchment-lined baking sheet and let cool.

Make the Batter: In a mixing bowl, combine the cornstarch, flour, baking powder, salt, black pepper, and garlic powder. Gradually add water to create a thick batter.

Prepare the Shrimp: Heat vegetable oil in a deep skillet over medium-high heat. Dip each shrimp into the batter, allowing the excess to drip off. Carefully place the battered shrimp in the hot oil, frying in batches for 2-3 minutes or until golden brown and crispy. Remove and drain on paper towels.

Create the Sauce: In a separate bowl, mix honey, mayonnaise, and condensed milk until smooth.

Combine and Serve: In a large bowl, gently toss the fried shrimp with the honey sauce until well coated. Fold in the caramelized walnuts gently, being careful not to break the shrimp.

Garnish: Transfer to a serving platter and garnish with chopped green onions to add a pop of color and freshness.
