1 lb baby carrots (or regular carrots, peeled and cut into sticks)

3 tablespoons honey

2 tablespoons olive oil

1 teaspoon cinnamon

1/2 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

1 tablespoon sesame seeds (optional for crunch)

Instructions
 

Preheat your oven to 425°F (220°C).

    In a large mixing bowl, combine the honey, olive oil, cinnamon, smoked paprika, salt, and pepper, whisking until smooth.

      Add the carrots to the bowl and toss until they are evenly coated in the honey mixture.

        Spread the coated carrots in a single layer on a baking sheet lined with parchment paper.

          Roast in the preheated oven for 20-25 minutes, or until the carrots are tender and slightly caramelized, stirring halfway through for even cooking.

            Once roasted, remove from the oven and sprinkle with chopped parsley and sesame seeds, if using, for added flavor and texture.

              Serve warm as a side dish or a light snack!
