3 tablespoons honey

2 tablespoons Dijon mustard

1 tablespoon olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1 tablespoon lemon juice

Preheat your oven to 400°F (200°C).

    In a large mixing bowl, combine the honey, Dijon mustard, olive oil, salt, black pepper, fresh thyme, and lemon juice. Whisk together until well blended.

      Add the baby carrots to the bowl and toss until they are evenly coated in the honey mustard mixture.

        Spread the coated carrots in a single layer on a baking sheet lined with parchment paper for easier cleanup.

          Roast the carrots in the preheated oven for 20-25 minutes, or until they are tender and slightly caramelized, stirring halfway through to ensure even cooking.

            Once cooked, remove the carrots from the oven and drizzle a little extra honey over them if desired.

              Transfer the glazed carrots to a serving dish and sprinkle with sesame seeds for a nutty finish if using.
