In a medium bowl, whisk together honey, minced garlic, soy sauce, grated ginger, olive oil, and lemon juice until well combined.
Season salmon fillets with salt and pepper on both sides, then place them in a shallow dish or a zip-lock bag.
Pour the honey garlic mixture over the salmon, ensuring each fillet is well coated. Marinate for at least 30 minutes in the refrigerator (up to 2 hours for more flavor).
Preheat your oven to 400°F (200°C).
Line a baking sheet with parchment paper. Place the marinated salmon fillets on the sheet, skin-side down, reserving the marinade.
Bake the salmon in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork.
Meanwhile, in a small saucepan, bring the reserved marinade to a simmer over medium heat, cooking for about 5 minutes until thickened slightly.
Remove the salmon from the oven and drizzle the thickened glaze over each fillet.
Optional: Broil the salmon for an additional 2-3 minutes for a caramelized finish, watching closely to prevent burning.
Remove from the oven and let rest for a couple of minutes before serving.
