1 ½ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

½ cup unsalted butter, softened

¾ cup honey

2 large eggs

2 teaspoons vanilla extract

1 cup Greek yogurt

1 medium apple, peeled and diced (preferably a tart variety)

½ cup sliced almonds, toasted

1 teaspoon ground cinnamon

Optional: powdered sugar for dusting

Instructions
 

Preheat your oven to 350°F (175°C). Grease and line an 8-inch round cake pan with parchment paper.

    In a mixing bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon. Set aside.

      In a large bowl, beat the softened butter and honey together until creamy and well combined.

        Add the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract.

          Gradually add the dry ingredients to the wet mixture, alternating with Greek yogurt. Mix until combined but do not overmix.

            Fold in the diced apple and half of the toasted almonds until evenly distributed.

              Pour the batter into the prepared cake pan and spread evenly. Top with the remaining toasted almonds.

                Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

                  Remove the cake from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

                    Once cooled, dust the top with powdered sugar if desired before serving.
