Ingredients

1 pound ground beef (or a mix of beef and pork)

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped

1 teaspoon dried oregano

1 teaspoon garlic powder

1 teaspoon onion powder

1 egg, beaten

Salt and pepper to taste

2 cups marinara sauce

4 submarine or hoagie rolls

1 cup shredded mozzarella cheese

Olive oil for frying

Instructions

In a large mixing bowl, combine the ground meat, breadcrumbs, Parmesan cheese, parsley, oregano, garlic powder, onion powder, egg, salt, and pepper. Mix until well combined and the mixture holds together.

Preheat your oven to 375°F (190°C).

Form the meat mixture into golf ball-sized meatballs, about 1.5 inches in diameter. You should have approximately 16 meatballs.

In a large skillet, heat a drizzle of olive oil over medium heat. Add the meatballs in batches, cooking until they are browned on all sides (about 5-7 minutes). They will finish cooking in the sauce later.

Once browned, remove the meatballs from the skillet and place them in a baking dish. Pour the marinara sauce evenly over the meatballs.

Cover the baking dish with foil and bake in the preheated oven for 20 minutes to ensure the meatballs are cooked through.

While the meatballs are baking, cut the submarine rolls lengthwise but not all the way through, and place them on a baking sheet.

After 20 minutes, remove the foil from the baking dish and sprinkle shredded mozzarella cheese over the meatballs and sauce. Return to the oven (uncovered) for an additional 5-10 minutes, or until the cheese is melted and bubbly.

To assemble the subs, take the hoagie rolls and stuff them generously with meatballs and sauce. Serve warm, garnished with additional parsley if desired.
