Ingredients

2 cups all-purpose flour

1 teaspoon active dry yeast

3/4 cup warm water (110°F)

1 teaspoon sugar

1/2 teaspoon salt

1 tablespoon olive oil

1 cup crushed tomatoes (preferably San Marzano)

1 cup fresh mozzarella cheese, sliced

Fresh basil leaves

1/4 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Instructions

Activate Yeast: In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5–10 minutes until it becomes frothy.

Make Dough: In a large mixing bowl, combine flour and salt. Create a well in the center and add the frothy yeast mixture and olive oil. Mix until a dough forms.

Knead Dough: Transfer the dough onto a floured surface. Knead for about 8–10 minutes until smooth and elastic.

First Rise: Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until it doubles in size.

Prepare Sauce: In a bowl, mix crushed tomatoes with salt, pepper, and optional red pepper flakes. Let it sit to combine flavors.

Shape Crust: Once risen, preheat your oven to 475°F (245°C). Punch down the dough and transfer it to a floured surface. Divide it into two portions. Roll each portion into a round shape, about 1/4 inch thick.

Assemble Pizza: Place the dough on a pizza stone or baking sheet. Spread a thin layer of the tomato sauce over the dough, leaving a small border for the crust. Arrange the mozzarella slices evenly on top and scatter fresh basil leaves.

Bake: Bake in the preheated oven for 12-15 minutes, or until the crust is golden and the cheese is bubbly and slightly browned.

Garnish and Serve: Remove the pizza from the oven. Add a few fresh basil leaves on top and drizzle with a little more olive oil if desired. Let it cool for a few minutes before slicing.
