Ingredients

2 to 3 pounds beef tenderloin roast, trimmed

1 stick (1/2 cup) unsalted butter, softened

4 cloves garlic, minced

2 tablespoons fresh rosemary, finely chopped

2 tablespoons fresh thyme, finely chopped

2 tablespoons fresh parsley, finely chopped

1 tablespoon Dijon mustard

Salt and freshly ground black pepper to taste

2 tablespoons olive oil

Optional: Fresh herbs for garnish

Instructions

Prepare the Herb Butter: In a medium bowl, combine the softened butter, minced garlic, rosemary, thyme, parsley, Dijon mustard, and a pinch of salt and pepper. Mix until well combined and set aside.

Preheat the Oven: Preheat your oven to 425°F (220°C).

Sear the Beef Tenderloin: In a large oven-safe skillet, heat the olive oil over medium-high heat. Season the beef tenderloin generously with salt and pepper. Once the oil is hot, sear the beef on all sides until a nice brown crust forms, about 3-4 minutes per side.

Apply the Herb Butter: Remove the skillet from heat. Carefully spread a generous layer of the herb butter mixture over the seared beef tenderloin, ensuring an even coating on all sides.

Roast the Beef: Transfer the skillet to the preheated oven and roast for about 25-30 minutes for medium-rare (130°F to 135°F internal temperature). Adjust the time according to your desired level of doneness.

Rest the Meat: Once done, remove the skillet from the oven and cover loosely with foil. Let the beef tenderloin rest for at least 10-15 minutes to allow the juices to redistribute.

Slice and Serve: After resting, slice the beef tenderloin into 1-inch thick slices. Serve warm with any remaining herb butter melted over the top and garnish with fresh herbs if desired.
