3 ripe bananas, mashed

1 cup granulated sugar

1/2 cup unsalted butter, softened

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

1/2 teaspoon salt

1 1/2 cups all-purpose flour

1/2 cup chopped walnuts

1 cup heavy whipping cream

2 tablespoons powdered sugar

1/2 teaspoon vanilla extract (for cream)

Additional walnuts for garnish

Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

    In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.

      Add the mashed bananas, eggs, and 1 teaspoon of vanilla extract to the bowl. Mix until well combined.

        In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the banana mixture, stirring just until combined.

          Fold in the chopped walnuts until evenly distributed throughout the batter.

            Pour the batter into the prepared cake pan, smoothing the top with a spatula.

              Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

                Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

                  While the cake is cooling, prepare the whipped cream. In a mixing bowl, beat the heavy whipping cream, powdered sugar, and 1/2 teaspoon of vanilla extract using an electric mixer until soft peaks form.

                    Once the cake is completely cool, slice it in half horizontally to create two layers.

                      Place the bottom layer on a serving plate and spread a generous layer of whipped cream over it.

                        Place the top layer on the whipped cream and frost the entire cake with the remaining whipped cream.

                          Garnish the top with additional chopped walnuts for a delightful crunch.
