1 large onion, diced

3 cloves garlic, minced

2 carrots, sliced

2 celery stalks, chopped

1 red bell pepper, diced

1 zucchini, diced

1 cup green beans, chopped

1 can (14 oz) diced tomatoes

6 cups vegetable broth

1 teaspoon dried thyme

1 teaspoon dried oregano

1 bay leaf

Salt and pepper, to taste

2 cups fresh spinach

1 tablespoon lemon juice

Fresh parsley, chopped for garnish

In a large pot, heat the olive oil over medium heat.

    Add the diced onion and sauté for about 5 minutes, or until translucent.

      Stir in the minced garlic, carrots, and celery; cook for another 3-4 minutes.

        Add the red bell pepper, zucchini, and green beans. Stir everything together and cook for an additional 5 minutes.
