1 leftover ham bone with meat

8 cups low-sodium chicken broth

2 cups potatoes, diced (about 2 medium-sized)

2 cups green cabbage, chopped

1 cup carrots, sliced

1 cup celery, chopped

1 onion, diced

3 cloves garlic, minced

2 teaspoons dried thyme

1 teaspoon paprika

Salt and pepper to taste

1 tablespoon olive oil

Fresh parsley for garnish

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion, and sauté for about 2-3 minutes until translucent.

    Stir in the minced garlic and cook for another 30 seconds until fragrant.

      Add the chopped celery, sliced carrots, and potatoes to the pot. Sauté for 5 minutes until they start to soften.

        Place the ham bone in the pot and pour in the chicken broth. Bring to a simmer, allowing the flavors to meld.

          Stir in the chopped cabbage, dried thyme, paprika, salt, and pepper. Cover and cook for 30-40 minutes, or until the cabbage and potatoes are tender.

            Once the soup is cooked, carefully remove the ham bone. Let it cool slightly before shredding any meat left on the bone and returning it to the soup.

              Taste and adjust seasoning if necessary. Allow the soup to cool slightly before serving.

                Serve hot, garnished with fresh parsley for a pop of color and flavor.
