1 cup Medjool dates, pitted and chopped

1 cup natural nut butter (like almond or peanut)

1 cup unsweetened shredded coconut

1 cup dark chocolate chips (dairy-free if desired)

½ cup chopped roasted peanuts

1 teaspoon vanilla extract

A pinch of sea salt

Prepare the Base: In a food processor, combine the chopped Medjool dates, nut butter, and vanilla extract. Pulse until the mixture is smooth and sticky.

    Incorporate Coconut: Add the unsweetened shredded coconut to the date mixture and pulse a few more times until well incorporated.

      Shape the Bars: Line a small square or rectangular baking dish with parchment paper. Press the date-coconut mixture evenly into the bottom of the dish to form a crust. Use a spatula to smooth the top and create even edges.

        Add the Peanuts: Sprinkle the chopped roasted peanuts over the crust, pressing them down gently so they adhere to the mixture.

          Melt the Chocolate: In a microwave-safe bowl, melt the dark chocolate chips in the microwave in 30-second intervals, stirring in between until fully melted and smooth.

            Top with Chocolate: Pour the melted chocolate over the peanut-covered date base, spreading it evenly with a spatula until fully covered.

              Chill: Place the dish in the refrigerator for at least 1 hour, or until the chocolate is firm.

                Slice and Serve: Once chilled, lift the bars out of the dish using the parchment paper. Cut into squares or bars of your desired size.
