1 cup whole wheat flour

1/2 cup unsweetened cocoa powder

1/2 cup honey or maple syrup

1/4 cup unsweetened applesauce

1/2 cup Greek yogurt

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup mini dark chocolate chips (optional)

1/4 cup chopped nuts (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and line a mini muffin tin with paper liners or spray with non-stick cooking spray.

    In a large mixing bowl, combine the whole wheat flour, cocoa powder, baking soda, baking powder, and salt. Whisk together until well combined.

      In a separate bowl, mix together the honey (or maple syrup), applesauce, Greek yogurt, eggs, and vanilla extract until smooth and well blended.

        Pour the wet ingredients into the dry ingredients and fold gently until just combined. Be careful not to overmix.

          If using, gently fold in the mini dark chocolate chips and chopped nuts.

            Spoon the batter into the prepared mini muffin tin, filling each cavity about 3/4 full.

              Bake for 12-15 minutes or until a toothpick inserted into the center of a muffin comes out clean.

                Remove from the oven and allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
