3 cups diced potatoes (Yukon Gold or Russet)

2 cups diced cooked ham

1 medium onion, finely chopped

1 cup shredded cheddar cheese (plus extra for topping)

1 cup sour cream

½ cup milk

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon dried thyme

Salt and pepper to taste

½ cup breadcrumbs (optional for crunch)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large pot, bring salted water to a boil. Add the diced potatoes and cook for about 8-10 minutes until just tender. Drain and set aside.

      In a large mixing bowl, combine the cooked ham, chopped onion, shredded cheddar cheese, sour cream, milk, garlic powder, dried thyme, and half of the diced potatoes. Mix well until everything is evenly coated.

        Gently fold in the remaining potatoes and season with salt and pepper to taste.

          Transfer the mixture into a greased baking dish (approximately 9x13 inches) and smooth the top with a spatula. If desired, sprinkle the breadcrumbs over the top for added crunch.

            For a cheesy finish, sprinkle extra shredded cheddar cheese on top.

              Drizzle olive oil over the top to help the breadcrumbs brown nicely.

                Bake in the preheated oven for 25-30 minutes, or until the top is golden and the casserole is bubbling.

                  Once cooked, remove from the oven and let it cool for a few minutes before serving.
