4 boneless, skinless chicken breasts

8 slices of thick-cut bacon

1 cup fresh spinach, chopped

1/2 cup cream cheese, softened

1 cup shredded mozzarella cheese

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 tablespoon olive oil

Fresh herbs (such as rosemary or thyme) for garnish

Instructions
 

Preheat your oven to 375°F (190°C).

    In a mixing bowl, combine the softened cream cheese, chopped spinach, mozzarella cheese, garlic powder, onion powder, salt, and pepper. Mix until well combined to create a creamy filling.

      Take each chicken breast and slice it horizontally (not all the way through) to create a pocket.

        Stuff each chicken breast with the cream cheese mixture, dividing it evenly among the breasts.

          Wrap each stuffed chicken breast with 2 slices of bacon, ensuring the filling is sealed. Secure with toothpicks if necessary.

            In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the bacon-wrapped chicken breasts and sear for about 3-4 minutes on each side until the bacon starts to crisp.

              Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken is cooked through and the bacon is crispy. Use a meat thermometer to ensure the chicken reaches an internal temperature of 165°F (75°C).

                Once done, remove from the oven and let the chicken rest for 5 minutes before slicing.
