8 oz elbow macaroni

2 tbsp unsalted butter

2 tbsp all-purpose flour

2 cups whole milk

1 cup Guinness stout (non-alcoholic beer can be used if preferred)

2 cups Irish cheddar cheese, shredded

1 cup Gruyère cheese, shredded

1 tsp Dijon mustard

1/2 tsp garlic powder

Salt and pepper to taste

1/2 cup breadcrumbs

2 tbsp olive oil

1 tbsp fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce: In the same pot, melt the butter over medium heat. Once melted, stir in the flour and cook for about 1 minute to make a roux, stirring constantly.

      Add Milk and Beer: Gradually whisk in the whole milk and Guinness, ensuring there are no lumps. Continue stirring until the mixture thickens (approximately 5-7 minutes).

        Add Cheese: Reduce the heat to low and gradually add the Irish cheddar and Gruyère cheese, stirring until melted and smooth. Add Dijon mustard, garlic powder, and season with salt and pepper.
