Ingredients

1.5 lbs flank steak

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon ground cumin

Salt and black pepper to taste

2 medium tomatoes, diced

1 red bell pepper, diced

1 green bell pepper, diced

1/4 red onion, finely chopped

2 tablespoons fresh cilantro, chopped

1 lime, juiced

1 jalapeño, seeded and minced (optional for heat)

Instructions

Begin by preheating your grill to medium-high heat. This ensures a nice sear on the flank steak.

In a small bowl, mix the olive oil, smoked paprika, garlic powder, ground cumin, salt, and black pepper. Rub this mixture all over the flank steak to evenly coat it.

In a separate bowl, combine diced tomatoes, red and green bell peppers, red onion, cilantro, lime juice, and jalapeño (if using). Toss well to combine and set aside to let the flavors meld.

Once your grill is hot, place the flank steak on it. Grill for about 5-7 minutes on each side for medium-rare, or adjust the cooking time to your preferred doneness.

Remove the flank steak from the grill and let it rest for about 5-10 minutes. This allows the juices to redistribute for a more tender bite.

While the steak is resting, give the salsa a good stir to ensure everything is well-mixed.

Slice the flank steak against the grain into thin strips and serve topped with the fresh tomato pepper salsa.

                Prep Time: 15 minutes | Total Time: 30 minutes | Servings: 4

                  - Presentation Tips: Serve the sliced flank steak on a wooden cutting board or a large platter. Spoon the vibrant salsa over the steak, and garnish with additional cilantro. A lime wedge on the side offers a nice touch for drizzling!
