Grilled Chicken Avocado Ranch Wrap

2 boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

1 ripe avocado, sliced

1 cup fresh spinach leaves

1 medium tomato, diced

½ cup shredded cheddar cheese

¼ cup ranch dressing

4 large whole wheat tortillas

Instructions
 

Preheat a grill or grill pan over medium-high heat.

    In a small bowl, mix together olive oil, garlic powder, smoked paprika, salt, and pepper. Rub this mixture evenly over the chicken breasts.

      Place the chicken on the preheated grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from the grill and allow to rest for 5 minutes before slicing.

        While the chicken is resting, warm the tortillas slightly in a dry skillet over low heat to make them more pliable.

          To assemble the wraps, lay a tortilla flat on a clean surface. Spread 1 tablespoon of ranch dressing in the center of the tortilla.

            Place a handful of spinach leaves down the center of the tortilla, followed by sliced chicken, avocado, diced tomato, and shredded cheddar cheese.

              Fold the sides of the tortilla inwards and then roll it tightly from the bottom up to enclose all the fillings.

                Repeat with the remaining tortillas and ingredients.

                  If desired, grill the wrapped tortillas for an additional 1-2 minutes on each side to crisp them up a bit.
