4 slices of sourdough bread

6 ounces Gouda cheese, sliced

1 cup cremini mushrooms, sliced

1 medium onion, thinly sliced

2 tablespoons olive oil

1 tablespoon butter

Salt and pepper to taste

Fresh thyme leaves for garnish (optional)

Prepare the Mushrooms and Onions: In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and sauté until they become translucent, about 5 minutes.

    Add Mushrooms: Add the sliced mushrooms to the skillet with the onions. Season with salt and pepper. Sauté for an additional 5-7 minutes until the mushrooms are golden brown and tender. Remove from heat and set aside.

      Assemble the Sandwich: Lay out two slices of sourdough bread. On each slice, layer half of the Gouda cheese, followed by an even amount of the sautéed mushrooms and onions. Top with the remaining Gouda cheese and finish with the other two slices of sourdough.
