Ingredients

4 large eggs

4 slices of whole-grain bread

4 slices of cheddar cheese

4 strips of cooked bacon or turkey bacon

1 ripe avocado, sliced

1 tablespoon mayonnaise

1 tablespoon Dijon mustard

1 tablespoon butter

Salt and pepper to taste

Fresh spinach leaves (optional)

Instructions

Prep the Ingredients: Begin by slicing the avocado and cooking the bacon until crispy. In a small bowl, mix the mayonnaise and Dijon mustard together to create a spread.

Heat the Griddle: Place your griddle over medium heat. Once hot, add the butter and let it melt, ensuring an even coating across the griddle surface.

Toast the Bread: Place the slices of whole-grain bread on the griddle and toast them for about 2-3 minutes on one side until golden brown. Flip the slices to the other side.

Cook the Eggs: While the bread is toasting, crack the eggs directly onto the griddle (or using a separate pan if preferred). Season with salt and pepper. Cook the eggs sunny side up for about 3-4 minutes; you want the yolk to be runny, but if you prefer it more cooked, flip them over to cook for another 1-2 minutes.

Assemble the Sandwich: Once the bread is toasted, layer the following on each piece: a slice of cheese, a strip of bacon, an egg, and avocado slices. For extra flavor, add fresh spinach leaves if you like.

Melt the Cheese: After layering, close up the sandwich with the second slice of bread and press down gently. Allow the sandwich to cook on the griddle for 1-2 minutes, then flip and cook for another 1-2 minutes until the cheese is melted and the bread is golden brown.

Final Touches: Remove sandwiches from the griddle. Spread the mayo-Dijon sauce on the inside of the sandwich before serving for added flavor.

                - Prep Time: 10 minutes | Total Time: 20 minutes | Servings: 4 sandwiches

Presentation Tips: Cut each sandwich diagonally and serve on a wooden board with some fresh fruit on the side for a colorful breakfast plate. Garnish with a sprig of parsley or a few spinach leaves for added freshness. Enjoy!
