Ingredients

1 pound fresh green beans, trimmed

1 can (14 oz) diced tomatoes with juices

1 small onion, finely chopped

2 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon chili flakes (adjust to taste)

1 tablespoon balsamic vinegar

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions

Begin by blanching the green beans. Bring a large pot of salted water to a boil, then add the green beans and cook for 3-4 minutes until vibrant green and tender-crisp. Drain and set aside in a bowl of ice water to stop the cooking process.

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until it becomes translucent.

Add the minced garlic to the skillet and cook for an additional 1-2 minutes, ensuring it does not burn.

Pour in the can of diced tomatoes with their juices, and stir in the dried oregano and chili flakes. Allow the mixture to simmer for about 5 minutes, allowing the flavors to meld.

Add the blanched green beans to the skillet, along with balsamic vinegar. Stir gently to combine, ensuring the beans are coated in the sauce. Cook for another 3-5 minutes until the green beans are heated through.

Season with salt and pepper to taste, adjusting for preference.

Remove from heat, and garnish with fresh basil leaves before serving.
