1 cup quinoa, rinsed

2 cups water or vegetable broth

1 cup cherry tomatoes, halved

1 cucumber, diced

1 bell pepper (any color), diced

1/2 red onion, finely chopped

1 cup Kalamata olives, pitted and sliced

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup lemon juice

3 tablespoons olive oil

1 teaspoon dried oregano

Salt and pepper to taste

Instructions
 

In a medium saucepan, combine the rinsed quinoa and water (or vegetable broth). Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes, or until the quinoa has absorbed the liquid and is fluffy. Remove from heat and let it cool.

    In a large mixing bowl, combine the halved cherry tomatoes, diced cucumber, diced bell pepper, finely chopped red onion, sliced Kalamata olives, and crumbled feta cheese.

      Once the quinoa is cool, fluff it with a fork and add it to the vegetable mixture in the bowl.

        In a small bowl, whisk together the lemon juice, olive oil, dried oregano, salt, and pepper. Pour the dressing over the quinoa and vegetable mix and toss everything together until well combined.

          Gently fold in the chopped fresh parsley for flavor and color.

            Adjust seasoning with additional salt and pepper as needed.

              Let the salad sit for at least 15 minutes to allow the flavors to meld, or refrigerate until ready to serve.
