2 large chicken breasts, sliced into thin strips

4 tablespoons olive oil

2 garlic cloves, minced

2 teaspoons dried oregano

1 teaspoon cumin

1 teaspoon paprika

Salt and pepper to taste

4 pita bread or flatbreads

1 cup sliced cucumbers

1 cup cherry tomatoes, halved

1 red onion, thinly sliced

Fresh parsley, chopped for garnish

For the Tzatziki:

1 cup Greek yogurt

1 cup grated cucumber, excess water squeezed out

1 garlic clove, minced

1 tablespoon lemon juice

1 tablespoon olive oil

Salt and pepper to taste

Marinate the Chicken: In a bowl, combine olive oil, minced garlic, oregano, cumin, paprika, salt, and pepper. Add the sliced chicken and marinate for at least 30 minutes (or up to 2 hours in the refrigerator) to absorb the flavors.

    Prepare the Tzatziki: In a medium bowl, mix together Greek yogurt, grated cucumber, minced garlic, lemon juice, olive oil, salt, and pepper. Stir well and refrigerate to allow the flavors to combine while you cook the chicken.

      Cook the Chicken: Heat a large skillet or grill pan over medium heat. Add the marinated chicken strips and cook for about 6-8 minutes, or until the chicken is golden brown and cooked through, stirring occasionally.

        Warm the Pitas: While the chicken is cooking, warm the pita bread in another skillet for about 1-2 minutes on each side until they are soft and pliable.

          Assemble the Gyros: On each warm pita, layer the cooked chicken strips, sliced cucumbers, cherry tomatoes, and red onion.

            Add the Tzatziki: Generously spoon the homemade tzatziki over the top of the fillings.

              Garnish and Serve: Finish with a sprinkle of fresh parsley for added flavor and color before wrapping the pitas or serving them open-faced.
