Gourmet Grilled Cheese with Gouda, Roasted Mushrooms, and Onions 🧀

4 slices of sourdough bread

6 ounces smoked Gouda cheese, grated

1 cup cremini mushrooms, cleaned and sliced

1 medium onion, thinly sliced

2 tablespoons unsalted butter

1 tablespoon olive oil

1 teaspoon fresh thyme leaves

Salt and pepper, to taste

Instructions
 

Sauté the Vegetables: In a large skillet over medium heat, combine the olive oil and 1 tablespoon of butter. Once melted, add the sliced onions and sauté for about 5 minutes until they start to caramelize. Stir in the sliced mushrooms and thyme, season with salt and pepper, and cook until the mushrooms are golden and tender, about 8-10 more minutes. Remove from heat and set aside.

    Prepare the Bread: While the vegetables are cooking, butter one side of each slice of sourdough bread with the remaining tablespoon of butter.

      Assemble the Sandwich: Place two slices of bread, buttered side down, onto a clean surface. layer half of the grated Gouda on each slice of bread. Next, add an equal portion of the sautéed mushroom and onion mixture on top of the cheese. Finally, sprinkle the remaining Gouda over the mushrooms and place the second slices of bread on top, buttered side up.

        Grill the Sandwiches: Heat the skillet used for vegetables over medium heat. Carefully place the assembled sandwiches in the skillet. Cook for 4-5 minutes without moving them, pressing down gently with a spatula, until the underside is golden brown and the cheese begins to melt.

          Flip and Finish Cooking: Carefully flip the sandwiches and grill the other side for another 4-5 minutes until it’s golden brown and the cheese is completely melted. Adjust the heat as needed to prevent burning.

            Serve: Once cooked, remove the sandwiches from the skillet, and let them rest for a minute. Cut each sandwich in half and serve warm.
