2 large onions, thinly sliced

2 tablespoons butter

1 tablespoon olive oil

1 teaspoon sugar

Salt and pepper to taste

4 slices of rustic bread (like sourdough or ciabatta)

1 cup shredded Gruyère cheese

1 cup shredded sharp cheddar cheese

2 tablespoons fresh thyme leaves (or 1 tablespoon dried thyme)

1 tablespoon balsamic vinegar

1 tablespoon Dijon mustard

In a large skillet, heat the butter and olive oil over medium heat.

    Add the sliced onions to the skillet. Sprinkle in the sugar, salt, and pepper. Cook for about 20-25 minutes, stirring occasionally, until the onions become deeply caramelized and golden brown.

      Once the onions are ready, stir in the balsamic vinegar and thyme, cooking for an additional 2 minutes to incorporate the flavors. Remove from heat and set aside.

        Butter one side of each slice of bread. On the unbuttered side of two slices, spread a thin layer of Dijon mustard.

          Pile a generous portion of the caramelized onions onto the mustard-covered bread, followed by a mix of Gruyère and cheddar cheese. Top with another slice of bread, buttered side facing out.
