Ingredients

24 Golden Oreo cookies, crushed

4 tablespoons unsalted butter, melted

2 cups cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

2 large eggs

1 cup fresh strawberries, hulled and sliced

1/2 cup sour cream

1/2 cup whipped cream (for topping)

Fresh strawberry slices (for garnish)

Instructions

Preheat Oven: Preheat your oven to 325°F (165°C).

Prepare the Crust: In a medium mixing bowl, combine crushed Golden Oreo cookies and melted butter. Mix until well combined.

Form the Base: Press the cookie mixture firmly into the bottom of an 8x8-inch baking pan to form an even crust. Bake for 10 minutes, then remove and let cool slightly.

Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy.

Incorporate Eggs: Add the eggs one at a time, mixing well after each addition. Finally, fold in the sour cream until combined.

Add Strawberries: Gently fold in the sliced strawberries into the cheesecake mixture, being careful not to break them too much.

Combine Layers: Pour the cheesecake filling over the cooled crust, spreading it evenly with a spatula.

Bake: Bake in the preheated oven for 35-40 minutes, or until the edges are set and the center is slightly jiggly.

Cool and Chill: Once baked, remove from the oven and let cool at room temperature for about 1 hour. Then, cover and refrigerate for at least 4 hours or overnight for best results.

Serve: Once chilled, cut into bars and top with whipped cream and additional fresh strawberry slices before serving.
