Instructions
In a large pot, heat the olive oil over medium heat. Add diced carrots and sauté for about 3-4 minutes until they begin to soften.
Add the zucchini and cherry tomatoes to the pot, and cook for another 3 minutes, stirring occasionally.
Pour in the vegetable broth and bring to a gentle simmer. Season with garlic powder, salt, and pepper.
Once simmering, add the potato gnocchi to the pot. Cook until the gnocchi start to float to the top, about 2-3 minutes.
Stir in the chopped kale or spinach and allow it to wilt in the hot soup for about a minute.
Taste and adjust the seasoning if necessary.
Ladle the soup into bowls and garnish with fresh basil and grated Parmesan cheese if desired.
Notes
Feel free to add other vegetables or herbs as desired.
