2 medium apples, peeled and diced (preferably Granny Smith)

1 cup all-purpose flour

1 tablespoon baking powder

1 teaspoon cinnamon

½ teaspoon nutmeg

¼ teaspoon salt

2 tablespoons granulated sugar

1 large egg

½ cup milk

1 teaspoon vanilla extract

Oil for frying (vegetable or canola)

Glaze:

1 cup powdered sugar

2 tablespoons milk

½ teaspoon vanilla extract

Instructions
 

In a medium bowl, combine the diced apples with 1 tablespoon of granulated sugar and cinnamon. Set aside to marinate for about 10 minutes.

    In another bowl, whisk together the flour, baking powder, nutmeg, salt, and remaining granulated sugar.

      In a separate bowl, beat the egg and then add milk and vanilla extract. Mix until combined.

        Pour the wet ingredients into the dry ingredients and mix until just combined (do not overmix). Gently fold in the marinated apple pieces.

          Heat about 2 inches of oil in a deep pot or deep fryer to 350°F (175°C).

            Using a tablespoon or cookie scoop, carefully drop spoonfuls of the batter into the hot oil, taking care not to overcrowd the pot. Fry until golden brown on all sides (about 2-3 minutes).

              Using a slotted spoon, remove the fritter bites and let them drain on paper towels.

                To prepare the glaze, whisk together powdered sugar, milk, and vanilla extract until smooth. Adjust the consistency by adding more milk for a thinner glaze or more powdered sugar for a thicker glaze.

                  While the fritter bites are still warm, drizzle or dip them in the glaze, allowing excess to drip off.

                    Place the glazed fritter bites on a cooling rack to set for a few minutes before serving.
