4 cod fillets (about 6 oz each)

¼ cup soy sauce

2 tablespoons fresh ginger, grated

2 tablespoons honey or maple syrup

2 cloves garlic, minced

1 tablespoon sesame oil

1 tablespoon rice vinegar

½ teaspoon black pepper

2 green onions, sliced (for garnish)

1 tablespoon sesame seeds (for garnish)

In a mixing bowl, combine the soy sauce, grated ginger, honey (or maple syrup), minced garlic, sesame oil, rice vinegar, and black pepper. Whisk until well blended to make the glaze.

    Place the cod fillets in a shallow dish and pour half of the ginger soy glaze over them. Cover and marinate in the refrigerator for at least 30 minutes, preferably up to 2 hours for enhanced flavor.

      Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.

        Remove the cod from the marinade and place the fillets on the prepared baking sheet. Reserve the marinade for later use.

          Bake the cod in the preheated oven for about 12-15 minutes, or until the fish flakes easily with a fork and is cooked through.

            In a small saucepan, bring the reserved marinade to a boil over medium heat. Allow it to simmer for 4-5 minutes until it thickens slightly, stirring occasionally.

              Once the cod is done, drizzle the thickened glaze over the fillets before serving.
