4 large russet potatoes, peeled and diced

1 medium onion, finely chopped

3 cloves garlic, minced

4 cups vegetable broth

1 cup heavy cream

2 carrots, diced

2 stalks celery, diced

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

4 tablespoons olive oil

Fresh chives, chopped (for garnish)

In a large pot, heat the olive oil over medium heat. Add the chopped onions and sauté until translucent, about 5 minutes.

    Add the minced garlic, diced carrots, and diced celery to the pot. Cook for an additional 3-4 minutes until the vegetables begin to soften.

      Stir in the diced potatoes, dried thyme, and smoked paprika, ensuring everything is well coated with the oil.

        Pour in the vegetable broth, making sure it covers the vegetables completely. Bring the mixture to a boil, then reduce the heat to a simmer. Cook for 20 minutes, or until the potatoes are soft.

          Use an immersion blender to puree the soup until smooth. If you prefer a chunkier texture, blend only half of the soup and mix it back in.

            Stir in the heavy cream and season with salt and pepper to taste. Allow the soup to simmer for an additional 5-10 minutes to heat through.

              Before serving, taste and adjust seasoning if necessary.
