4 boneless pork chops (about 1 inch thick)

2 tablespoons olive oil

4 cloves garlic, minced

1 medium onion, finely chopped

8 oz (225 g) button mushrooms, sliced

1 cup chicken broth

1 cup heavy cream

1 teaspoon dried thyme

Salt and pepper to taste

2 tablespoons fresh parsley, chopped (for garnish)

Prepare the Pork Chops: Season both sides of the pork chops with salt and pepper.

    Sear the Chops: In a large skillet, heat olive oil over medium-high heat. Once hot, add the pork chops and sear for 4-5 minutes on each side or until golden brown and cooked through. Remove and set aside.

      Sauté the Aromatics: In the same skillet, add the minced garlic and chopped onion. Sauté for about 2 minutes until fragrant and the onions are translucent.

        Cook the Mushrooms: Add the sliced mushrooms to the skillet and cook for another 5 minutes until they are soft and slightly browned.

          Make the Sauce: Pour in the chicken broth, scraping the bottom of the skillet to deglaze. Stir in the heavy cream and dried thyme. Allow the mixture to simmer for about 3-4 minutes until the sauce thickens slightly.

            Combine: Return the pork chops to the skillet, nestling them in the sauce. Simmer for another 2-3 minutes to heat the chops through. Adjust seasoning with salt and pepper to taste.

              Serve: Remove from heat and garnish with fresh parsley before serving.
