1.5 lbs baby potatoes, halved

4 cloves garlic, minced

1/4 cup grated Parmesan cheese

3 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 425°F (220°C).

    In a large bowl, combine olive oil, minced garlic, dried oregano, paprika, salt, and pepper. Mix well to create a marinade.

      Add the halved baby potatoes to the bowl and toss until they are well coated with the garlic oil mixture.

        Spread the coated potatoes on a baking sheet in a single layer, cut sides down for optimal crispness.

          Roast in the preheated oven for 20 minutes.

            After 20 minutes, remove from the oven and sprinkle the grated Parmesan cheese over the potatoes.

              Return the baking sheet to the oven and roast for an additional 10-15 minutes, or until the potatoes are golden brown and crisp, and the cheese is melted and slightly toasted.

                Once done, take them out and let them cool for a few minutes before garnishing with fresh chopped parsley.
