baby carrots, peeled

grated Parmesan cheese

dried rosemary

fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 425°F (220°C).
In a large bowl, combine the baby carrots, olive oil, minced garlic, dried rosemary, salt, and black pepper. Toss until the carrots are evenly coated.
Spread the carrots in a single layer on a baking sheet lined with parchment paper.
Roast in the preheated oven for 20-25 minutes, or until the carrots are tender and slightly caramelized, flipping halfway through for even cooking.
Remove from the oven and immediately sprinkle with grated Parmesan cheese, tossing gently to ensure even coverage.
Return to the oven for an additional 5 minutes, allowing the cheese to melt and become crispy.
Once done, remove the carrots from the oven and let them cool slightly.
Garnish with freshly chopped parsley before serving.
Notes
For extra flavor, add a squeeze of lemon juice before serving.
