Garlic Parmesan Chicken Skewers

1.5 lbs chicken breast, cut into 1-inch cubes

1/4 cup olive oil

4 cloves garlic, minced

1/2 cup grated Parmesan cheese

1 tablespoon fresh parsley, chopped

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon paprika

Skewers (soaked in water if wooden)

Instructions
 

In a mixing bowl, whisk together the olive oil, minced garlic, salt, black pepper, paprika, and half of the grated Parmesan cheese to create a marinade.

    Add the cubed chicken breast to the marinade, tossing to ensure that each piece is well coated. Cover and refrigerate for at least 30 minutes (or up to 2 hours for enhanced flavor).

      Preheat your grill or grill pan over medium-high heat.

        While the grill is heating, thread the marinated chicken onto skewers, leaving a little space between each piece for even cooking.

          Once the grill is ready, place the skewers on it and cook for about 12-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).

            In the last few minutes of cooking, sprinkle the remaining Parmesan cheese over the skewers so it can melt slightly.

              Once cooked, remove the skewers from the grill and let them rest for a couple of minutes. Then, sprinkle with chopped parsley for freshness.
