Ingredients

1 pound ground chicken

1 cup breadcrumbs (preferably panko for extra crunch)

1/2 cup grated Parmesan cheese

3 cloves garlic, minced

1/2 cup finely chopped fresh parsley

1/4 cup milk

1 egg, beaten

1 teaspoon onion powder

1 teaspoon Italian seasoning

Salt and pepper to taste

1/2 cup marinara sauce (for serving)

Extra Parmesan cheese for topping

Instructions

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or lightly grease it.

In a large mixing bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, minced garlic, chopped parsley, milk, beaten egg, onion powder, Italian seasoning, salt, and pepper.

Use your hands or a spoon to mix the ingredients until everything is well incorporated, but be careful not to overmix.

Form the mixture into small meatloaf shapes (about the size of your palm) and place them on the prepared baking sheet.

Once all the meatloaves are shaped, sprinkle a little extra Parmesan cheese on top of each one for added flavor and crunch.

Bake in the preheated oven for 25-30 minutes or until the meatloaves are cooked through (internal temperature should be 165°F or 74°C).

While the meatloaves are baking, heat the marinara sauce in a small saucepan over low heat.

Serve the meatloaves warm, topped with a drizzle of marinara sauce and extra fresh parsley for garnish.
