Instructions
In a large mixing bowl, combine the warm water, instant yeast, and sugar. Allow it to sit for about 5 minutes until it becomes frothy.
Add in the olive oil, salt, and 1 cup of flour. Stir until the mixture is combined.
Gradually add the remaining flour, mixing until a dough forms. Knead the dough on a lightly floured surface for about 5-7 minutes until smooth and elastic.
Place the dough in a greased bowl, cover it with a cloth, and let it rise in a warm place for about 1 hour, or until it has doubled in size.
Preheat your oven to 400°F (200°C).
Once the dough has risen, punch it down and divide it into 12 equal pieces. Roll each piece into a stick about 6 inches long and place them on a parchment-lined baking sheet.
In a small bowl, mix the melted butter, minced garlic, mixed herbs, and red pepper flakes if using. Brush this mixture generously over the shaped breadsticks.
Let the breadsticks sit for an additional 10-15 minutes to rise slightly.
Bake in the preheated oven for 12-15 minutes, or until they are golden brown. If desired, sprinkle grated Parmesan cheese over the top during the last 2 minutes of baking.
Once done, remove from the oven and brush with any remaining garlic herb butter before serving.
