Ingredients

1 lb sirloin steak, cut into bite-sized pieces

2 tablespoons olive oil

4 cloves garlic, minced

4 tablespoons unsalted butter

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh thyme, chopped

Salt and pepper to taste

For the Crispy Cheddar Smashed Potatoes:

1 lb baby potatoes

1 cup shredded cheddar cheese

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Fresh chives, chopped (for garnish)

Salt and pepper to taste

Instructions

Cook the Potatoes:

    - In a large pot, bring salted water to a boil. Add baby potatoes and cook for about 15-20 minutes or until tender. Drain and let cool slightly.

      Mash the Potatoes:

        - Preheat your oven to 425°F (220°C). On a baking sheet, place the potatoes and use a fork or a potato masher to gently smash each one, pressing them down to about half an inch thick.

          Season and Bake:

            - Drizzle the smashed potatoes with olive oil, then sprinkle with garlic powder, onion powder, salt, and pepper. Bake in the preheated oven for 20-25 minutes or until the edges are crispy and golden brown.

              - In the last 5 minutes of baking, sprinkle with shredded cheddar cheese and return to oven until melted and bubbly.

                Prepare the Steak Bites:

                  - In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season the steak pieces with salt and pepper.

                    - Once the skillet is hot, add the steak bites in a single layer (do this in batches if necessary) and cook for about 2-3 minutes on each side until browned and cooked to your desired doneness.

                      Add the Garlic Butter:

                        - Reduce the heat to low and add the minced garlic, butter, rosemary, and thyme to the skillet. Toss the steak bites in the garlic butter for another 1-2 minutes until well coated and fragrant.

                          Serve:

                            - Plate the crispy cheddar smashed potatoes alongside the garlic butter steak bites. Drizzle any leftover garlic butter from the skillet over the potatoes and garnish with chopped chives.
