1 pound sirloin steak, cut into bite-sized pieces

1 pound baby potatoes, halved

4 tablespoons unsalted butter

5 cloves garlic, minced

1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried)

1 teaspoon fresh thyme leaves (or ½ teaspoon dried)

1 teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Prepare the Potatoes: Preheat your oven to 425°F (220°C). Place the halved baby potatoes in a large bowl, drizzle with olive oil, and sprinkle with salt, pepper, and smoked paprika. Toss until well coated.

    Roast the Potatoes: Spread the potatoes in a single layer on a baking sheet and roast in the preheated oven for 25-30 minutes, or until golden brown and crispy, flipping halfway through.

      Cook the Steak Bites: While the potatoes are roasting, season the steak bites with salt and pepper. In a large skillet over medium-high heat, melt 2 tablespoons of butter. Once hot, add the steak bites in a single layer (you may need to do this in batches) and sear for about 2-3 minutes, until browned on all sides but still tender inside.

        Add Garlic and Herbs: Lower the heat to medium, and add the minced garlic, chopped rosemary, and thyme to the skillet with the steak. Cook for an additional 1-2 minutes until the garlic is fragrant and lightly golden.

          Combine and Finish: Remove the skillet from heat and stir in the remaining 2 tablespoons of butter until melted, coating the steak bites in the garlic butter.

            Serve: Once the potatoes are done roasting, remove them from the oven and season with additional salt if needed. Serve the garlic butter steak bites alongside the crispy potatoes, garnished with freshly chopped parsley.
