1 lb (450g) sirloin steak, cut into bite-sized cubes

4 tablespoons unsalted butter, divided

4 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 teaspoon smoked paprika

Salt and pepper, to taste

1 lb (450g) russet potatoes, peeled and diced

½ cup heavy cream

3 tablespoons sour cream

2 tablespoons chives, finely chopped (for garnish)

Prepare the Mash: In a large pot, bring salted water to a boil. Add the diced russet potatoes and cook for about 15-20 minutes or until fork-tender. Drain the potatoes and return them to the pot.

    Make the Creamy Base: Add heavy cream, sour cream, salt, and pepper to the drained potatoes. Mash until smooth and creamy. Set aside and keep warm.

      Sear the Steak: In a large skillet over medium-high heat, add 2 tablespoons of butter. Once melted and bubbling, add the steak cubes, making sure not to overcrowd the pan. Sear for about 2-3 minutes, tossing occasionally, until browned on all sides.

        Add Flavor: Lower the heat to medium and add the remaining 2 tablespoons of butter. Add the minced garlic, thyme, smoked paprika, salt, and pepper. Continue to cook, stirring frequently, for an additional 2 minutes until the garlic becomes fragrant and the steak bites are well coated.

          Serve: On a plate, spoon a generous amount of creamy mashed potatoes and then pile the garlic butter steak bites on top. Drizzle any remaining garlic butter from the skillet over the steak.

            Garnish: Sprinkle finely chopped chives over the dish for a fresh finish.
